Tomato Paste
Tomato paste is a thick paste commonly used in cooking. To make tomato paste, tomatoes are peeled and deseeded, then cooked under vacuum for several hours. The mixture is then reduced and cooked again to produce a rich concentrate.
In contrast, tomato purée is made from cooked tomatoes and has a shelf life that falls between tomato paste and diced tomatoes.
